Simply use single picture pins (two for each canvas) and align carefully using a spirit level.
On a Diptych or Triptych display, where there is a set of canvases involved, draw a faint horizontal pencil line using a spirit level at the intended vertical position of the pins, then measure and set the distance between each set of pins accordingly. Important: remember to take into account the desired distance between each canvas before marking the final positions of the pins.
